優質天然生鴨髀,鴨髀採購優質農場,而農場對肉類的要求非常高,品質非常優質,肉質細嫩而多肉,適合烤焗、製作油封鴨脾或慢燉。



法式油封鴨


醃料:

粗海鹽1/4杯

黃糖1湯匙

蕃莤Parsley1小扎

麝香草Thyme2 湯匙

胡椒粒peppercorn1茶匙

材料:

生鴨髀4隻

鴨油半罐


做法:

1. 所有醃料打蓉,

2. 剪去多餘的肥膏,再要拔毛美白一番,

3. 將醃料塗勻鴨髀醃至2日(48小時)

4.洗走鴨髀醃料,放鴨髀入煲,再加入鴨油,鴨油要全面覆蓋,半罐鴨油配4隻鴨髀,剛剛好。

5.放入焗爐,用90度細火慢烤9小時,一定要用低溫的。
